Lacruar / Lakror

 


Zucchini/Courgette/Marrow Filo pie 

Coarsely grate a very large zucchini or marrow.  Sprinkle with salt and let sit.  squeeze out all the liquid. 

Mix the pulp with 3 eggs, 2 table spoons flour, 2 table spoons sugar, 2 table spoons milk powder. 

Place 5-6 layersof filo on a pan and brush each one with melted butter. 

Spread the filling on it, top with 3-4 more layers of filo and melted butter.  Roll edges together, brush with butter. 

Bake at 200C /  400F for 30-40 minutes, until puffy, golden and bottom crust is light brown.  Use bottom heat oven for final 5-10 minutes if possible.  

Remove and cool.  


Spinach filling

Cook lots of spinach in the microwave.  Mix with chopped spring onions and a mix of cheeses including feta, middle eastern 'white cheese' (the sort that comes in a tetra-pack), eggs, and any other greens.  Cook as above.
